1. It all starts with the raw material

2. Mastery of the equipment

Every roasting machine has its own “personality.” We learn how our equipment responds to temperature, airflow, and batch size in order to achieve consistency and precision.
Monitoring parameters such as temperature, roast time, and development curve allows us to maintain exact control at every stage.

3. Temperature and airflow control

The balance between heat and airflow defines the pace of the roast.
A steady, gradual increase in temperature allows the bean to develop evenly, bringing out its natural aromas without compromising them.
The goal isn’t speed, it’s balance. Every bean needs its own time.

4. The development phase

After the first crack, the most critical stage begins, the development of flavor and aroma.
The duration of this phase, along with the rate of rise of the temperature, determines whether the coffee will have more bitterness with less acidity, or more brightness with a lighter profile. Carefully monitoring the temperature curve allows us to achieve the desired character for each origin.

5. Resting and stabilization

After roasting, coffee needs time to degas. During this period, it releases carbon dioxide, an essential step to preserve clarity of flavor and aromatic intensity during extraction.

6. Recording and evolution

Roasting is a continuous learning process. We keep detailed records for every batch, temperature, time, airflow, and cupping results, so we can constantly refine and evolve our techniques. Consistency is never a coincidence; it’s the result of observation, experimentation, and relentless improvement.
