One of the key factors that define a coffee’s identity and flavor is the post-harvest processing method, meaning the way the coffee cherry is transformed into green beans ready for roasting. Two of the most widely used methods are washed (or wet) and natural (or dry) processing.
The Washed Method
Ripe coffee cherries are depulped, then placed in water tanks where fermentation breaks down the mucilage. The beans are then washed and set out to dry.
The result: a bean that clearly highlights the characteristics of the terroir soil, climate, and altitude with a cleaner flavor profile, higher acidity, and a lighter body.

The Natural Method
The cherries are left to dry whole, either intact on the fruit or spread out on patios or raised beds. During drying, fruity sugars and aromatic compounds infuse the beans.
The result is typically a coffee with a fuller body, sweet texture, and aromas reminiscent of ripe or tropical fruits creating a cup with a rich and often explosive personality.
For us, natural processing represents a more spontaneous approach. It lets nature take the lead, yielding coffees full of intensity, depth, and fruit-forward character.
